Leftover Easter 

Healthy no mayo egg salad bites. Perf option for leftover dyed eggs 

Can be made for one or many. Below is a single serving 

1-2 hard boil eggs chopped

1/2 avacodo cubed

1 Tablespoon of goat cheese/Greek yogurt/ricotta cheese

1/4 red Thai curry paste

Salt and pepper

Combine all ingredients and smash with fork. Enjoy
