Snow days call for some hot libations, I spent twenty minutes upgrading mine with cinnamon simple syrup.
This was promptly added to a soy mezcal chai latte
1 cup of light brown sugar
1 cup of water
5-7 cinnamon sticks, depending on size and flavor preferred
Combine all ingredients in small sauce pan over medium high heat
Stir until sugar is dissolved
Bring to a boil, stirring occasionally
Reduce over a simmer for about 10 minutes, go longer until coats back of a spoon.
Drain into mason jar and add cinnamon sticks. Refrigerate for 1-2 months.
Add to oatmeal, pancakes, tea, granola, yogurt, ice cream, coffee, cocktails, etc
