The easiest and delicious pesto, that goes with everything with a fresh, spring flavor. Unlike some pestos this pesto is not oily. We slathered this on savory waffles (see pic below), with scrambled eggs, grilled cheese, veggie burgers, salad, and basically by the spoonful.
Spinach Sage Almond pesto:
1 cup fresh sage leaves
5-7 fresh basil leaves
3 cups of fresh spinach
1 clove of garlic
Large pinch of salt and pepper
1/4 cup of almonds
1/2 cup of EVOO
Juice of 1/2 a large lemon
Preheat oven to 350
Place almonds on a baking sheet and roast for 10-15 minutes
Place all the ingredients into the food processor and blend until smooth
Store in a mason jar and refrigerator until use
Or freeze in an ice cube tray to quickly add to pastas and rice for future use.
