Pickled Corn

Jarring the sweet freshness of jersey local summer farm tastes.

2 Corn Kernals
1 diced jalapeño
2 small diced shallots
2 small dried chili
1/4 cup chopped cilantro
1/4 cup fresh squeezed lime juice
1/4 teaspoon of black pepper
Combine in large bowl
Portion into heat proof jar

Boil
1/4 cup apple cider vinegar
3/4 cups of water
1 teaspoon of sugar
2 teaspoons of salt

Pour vinegar over corn in heatproof jar
Seal jar and cool
Chill and keep unopened for 1 month
